Cooking Recipes for Panko Bread Crumbs

One month ago I shared several recipes for cooking with panko bread crumbs. Many of my friends asked for more information. Today I’ll share more cooking recipes for panko bread crumbs  which are easy to learn at home.


Let's start with fried fish.

Ingredients: 

2-3 thin fish fillet (I tend to make it with thinner fillets), around 100g/pc, 100g panko bread crumbs, 2 eggs, 5g paprika, less oil about 50-80g.


Directions:

- Use scrunched up paper towels to pat the fish dry on both sides. This is especially important if you are using thawed frozen fish.

- Beat eggs in a bowl, add some water.

- Combine panko bread crumbs and paprika in another bowl.

- Coat fish on both sides firstly with egg mixture and then with bread crumbs, pressing down firmly so it adheres, but shake well to remove excess.

- Heat the pan before adding the oil then put oil into frying pan.

- Heat a heavy based skillet (normal or non stick) over medium high heat until you see wisps of smoke.

- Add fish. Shake the pan lightly to move the fish. Cook for about 2 minutes until golden and crisp, cook the other side for 2 minutes until crisp then remove.


It is so simple, so quick and so satisfying, but there are some tips need to know if you want to cook fried fish successfully. 


1). Pat the fish dry.

2). Make sure your fish has been pin boned (i.e. bones removed).

3). Shaking off excess panko bread crumbs is very necessary for crispy skin.


Another recipe --- salad with breadcrumbs. Bread crumbs are more often used in fried foods, but they are also very tasty for making salads.

Ingredients: 

200-300g panko bread crumbs, 1 tiny clove garlic, 2-3g salt, 50g olive oil, half a lemon, 2g black pepper, 1/2 cup (about 2 ounces) parmesan cheese.


Directions:

- Add panko bread crumbs, garlic and salt in a bowl, stir for about 30 seconds.

- Put the oil in the pan, pour the stirred bread into the pan in a skillet over medium heat. Stir occasionally, and toast until golden. Set aside.

- In the bottom of a salad bowl, whisk together 2 tablespoons olive oil, lemon juice, salt and pepper. Let the salad sit for about 10 minutes. Then top with cheese and breadcrumbs.


This salad is very simple and delicious, you can easily get it!
